Handcrafted Lollipops with Honey and Lemon
Ingredients
- 1 cup granulated sugar
- 1/2 cup honey
- 1/2 cup water
- 1/4 cup freshly squeezed lemon juice
- Food coloring (optional)
- Lollipop molds and sticks
Instructions
- Combine the sugar, honey, and water in a medium saucepan and place it over medium heat, stirring until the sugar has dissolved.
- Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10 minutes, or until the mixture reaches 300°F on a candy thermometer.
- Remove the saucepan from the heat and stir in the lemon juice. Let the mixture cool slightly, until it reaches 275°F.
- Add a few drops of food coloring to the mixture, if desired, and stir to combine.
- Pour the mixture into lollipop molds, leaving about 1/4 inch of space at the top. Insert a lollipop stick into each mold and let the mixture cool and harden completely.
- Once the lollipops have hardened, remove them from the molds and serve. You can also wrap them in plastic wrap or cellophane bags for storage or gift-giving.
- To add an extra touch to your lollipops, you can drizzle them with a little extra honey or sprinkle with edible glitter before serving.
